Vegan Mayonnaise

    Ingredients

    • 300g Bean Supreme Soft Style Tofu
    • 2 tsp sesame oil
    • 4 tbs apple cider vinegar
    • 3 lemons, juice of
    • 1 tsp mustard powder
    • 1 tsp salt
    • ½ cup (125ml) vegetable oil

    Method

    1. Step 1

      Whizz together the tofu, sesame oil, cider vinegar, mustard and salt in a high speed blender or food processor.
    2. Step 2

      Keep the machine going, and gradually drizzle in the oil until the mixture is well combined. When all oil is incorporated, turn off the machine.
    3. Step 3

      Store in sealed jar in the fridge, lasts for two – three weeks.

    Tips

    • For garlic mayonnaise add, 2-3 roasted, crushed garlic cloves.
    • For mustard mayonnaise add 2 teaspoons whole grain mustard.
    • Not all mustard powders are gluten free. If you are gluten free, make sure that you check the ingredients of the mustard.
