Coconut caramel:
- 1/4 cup coconut sugar
- 1 tsp water
Flan:
- 150g avocado
- 1 1/2 cup So Good Oat Unsweetened
- 3/4 tsp agar-agar powder
- 2 Tbs coconut sugar
- 1/4 tsp vanilla extract
- Pinch of salt

Step 1
Place the coconut sugar in a small pan and 1 tsp water, and heat up to medium heat then transfer to a heat friendly container.Step 2
Place the So Good Unsweetened into a small pot and whisk in the agar-agar powder and bring to a boil.Step 3
Remove from heat and place in a blender with the avocado, coconut sugar, vanilla extract, and pinch of salt and blend until smooth.Step 4
Pour into the container with the coconut caramel.Step 5
Chill for 4 hours.
