In a pot, toast the mung beans, mixing occasionally, until mostly brown.Step 2
Add in the water and bring to a boil.Step 3
Bring to medium low heat and cook for 15-20 minutes or until mung beans are soft.Step 4
Add in the coconut sugar, lite coconut milk, and So Good Soy Regular.Step 5
Simmer for 5-8 minutes.
