Sweet Mungbean Soup

    Ingredients

    • 1/2 cup raw mung bean
    • 5 cups water
    • 1/4 cup coconut sugar
    • 1/4 cup lite coconut milk
    • 1/2 cup So Good Soy Regular Milk

    Method

    1. Step 1

       In a pot, toast the mung beans, mixing occasionally, until mostly brown.
    2. Step 2

      Add in the water and bring to a boil.
    3. Step 3

      Bring to medium low heat and cook for 15-20 minutes or until mung beans are soft.
    4. Step 4

      Add in the coconut sugar, lite coconut milk, and So Good Soy Regular.
    5. Step 5

      Simmer for 5-8 minutes.
