For the rice
- 2 cups (400g) uncooked basmati or brown rice

- ½ cup (60g) green beans, sliced
- ½ cup (60g) frozen green peas
- ½ cup (80g) red capsicum, diced
- 3 spring onions, thinly sliced (green part only)
- 1 cup (100g) lettuce, sliced
For the tofu
- 350g firm tofu, cut into 1-inch cubes
- ½ tsp iodised table salt
- ¼ tsp crushed black pepper
- 1 tsp Chinese 5-spice powder
- 1 Tbsp corn starch
- 1 Tbsp neutral oil
