Summer sausage sandwich

    Get more plants on your plate with this delicious salad made with Vegie Delights Thick BBQ Sausages. They're a good source of iron, protein and vitamin B12. 

    Ingredients

    • 1 packet Vegie Delights Thick BBQ Sausage or Classic Hot Dogs 
    • 1 tbs reduced fat mayonnaise
    • 2 tsp seeded mustard
    • 5 wholemeal/multigrain bread, sliced down the middle 
    • ¹⁄4 cup (60ml) tomato chutney
    • 1 cup rocket leaves

    Method

    1. Step 1

      Heat a frypan or BBQ on high heat and cook
    2. Step 2

      Whilst sausages are cooking, whisk together vegan mayonnaise and seeded mustard in a small bowl and set aside.
    3. Step 3

      Once sausages are ready, open up the bread rolls, spread with mustard mayo, fill with rocket leaves and sausages, top with tomato chutney and serve.
