Tikka Masala

Ingredients

  • 1 pack Vegie Delights™ Vegie Sausages
  • 1/3 cup mild tikka masala paste
  • 1 tbs olive oil
  • 1 small onion, diced
  • 2 cm piece ginger, finely grated
  • 2 cloves garlic, crushed
  • 1 carrot, diced
  • 2 cups cauliflower florets (1/2 medium head)
  • 1 x 400 g tin no added salt diced tomatoes
  • 1/4 cup water
  • 1/2 cup plain low-fat Greek style yoghurt
  • Salt & pepper, to taste

To serve

  • 2 cups steamed white rice
  • Fresh coriander leaves

Method

  1. Step 1

    Cut each vegie sausage into 4 even pieces. Combine sausages and tikka masala paste in a bowl and mix well.
  2. Step 2

    Drizzle oil into a large skillet over medium heat. Add onion, ginger, and garlic, and cook 3 - 4 minutes, until starting to soften.
  3. Step 3

    Add sausages and tikka masala paste to the pan. Cook for a minute or two, stirring regularly, until the paste is fragrant.
  4. Step 4

    Add the carrots, cauliflower, tomatoes and water. Stir well to combine, cover pan, and simmer for 10 minutes, until the vegetables start to soften.
  5. Step 5

    Add yoghurt and gently stir through. Season to taste.
  6. Step 6

    Serve tikka masala over rice, and garnish with fresh coriander leaves.
