Smokey Breakfast Burrito

    Ingredients

    • 4 Vegie Delights™ Vegie Hot Dogs, sliced into rounds
    • 1tbs olive oil
    • 4 medium sized spinach and herb wraps
    • 4 eggs
    • ½ cup of So Good™ Regular Soy Milk
    • 1 avocado
    • ½ tomato, diced
    • ⅓ red onion, diced
    • 4 hash browns

    Method

    1. Step 1

      Heat oil in a medium frypan and cook the Vegie Hot Dogs for 4-5 minutes until lightly browned. Remove and set aside.
    2. Step 2

      Add hash browns to frypan and cook as per instructions on the pack. Remove and set aside.
    3. Step 3

      Whisk the eggs in a bowl and add soy milk, pour into the frypan and scramble. Once cooked, place in a bowl to cool down.
    4. Step 4

      Mix the tomato and onion with the mashed avocado.
    5. Step 5

      Individually lay each wrap on a large plate and spread ¼ of the avocado mix, add one hash brown and ¼ of the scrambled egg followed by ¼ of the Vegie Hot Dog slices.
    6. Step 6

      When rolling the breakfast burrito, ensure all filling is in a line down the centre. Fold the sides inwards, over the filling. Roll the burrito tucking, as you roll. Continue rolling until your burrito is seam side down.
    7. Step 7

      Place in the oven for 2-3 minutes at 200°C to warm, then safely insert a toothpick and enjoy.
