Classic Burger with Sweet Potato Wedges

    Ingredients

    • 1 tbs olive oil
    • 1 pack Vegie Delights™ Smokey BBQ Burgers
    • 4 wholemeal bread rolls
    • 4 slices reduced-fat cheddar cheese of choice
    • 1 small sweet gherkin, sliced
    • 2 medium tomatoes, sliced
    • 2 cups rocket
    • 1 tbs American style mustard
    • 1 tbs chipotle aioli

    Sweet Potato Wedges:

    • 2 large sweet potatoes, thickly sliced into wedges
    • 1 tbs olive oil

    Method

    1. Step 1

      Preheat oven to 220C. For the sweet potato wedges, toss cut up sweet potato in olive oil and then spread evenly onto a baking tray lined with baking paper. Bake until cooked through and browned, 30 minutes.  
    2. Step 2

      Preheat frypan or BBQ plate to medium heat. Add oil and cook burgers 10-12 minutes, turning halfway. Remove from heat.
    3. Step 3

      Top base of bread roll with rocket, tomato slices, gherkin and a burger patty. Finish with a cheese slice and sauces and a few more rocket leaves. Serve with sweet potato wedges and enjoy’.
