Soak the red mung bean in water overnight.Step 2
Place the red mung bean and 3 cups of water in a pot and bring to a boil, then continue to cook on medium low heat until soft.Step 3
Mix in the raw sugar and 1/2 cup So Good Soy Regular. Set aside and let cool.Step 4
Layer your glass with Weet-Bix, red mung bean paste, and chopped fruit, then pour the So Good Soy Regular before you eat.
