Red Bean Ice

    Ingredients

    • 250g red mung bean
    • 3 cups water
    • 1/4 cup raw sugar
    • 2 1/2 cups Ice
    • 3 cups So Good Almond Original

    Optional:
    • vanilla ice cream

    Method

    1. Step 1

      Soak the red mung beans in water overnight.
    2. Step 2

      Strain the mung beans and place into a small pot with 3 cups of water and 1/4 cup of raw sugar and cook until soft and firm, about 40 minutes on medium low heat.
    3. Step 3

      Set aside and let cool.
    4. Step 4

      Serve with crushed ice and So Good Almond Original.
