Pandan Coconut Jelly

    Ingredients

    Pandan Jelly:

    • 4 pandan leaf
    • 1 1/2 cup water
    • 2 Tbs raw sugar
    • 1/2 tsp agar-agar powder

    Soy Jelly:
    • 1 1/4 cup So Good Soy Regular
    • 3/4 tsp agar-agar powder
    • 1 Tbs raw sugar
    • 1/2 cup young coconut meat

    Method

    1. Step 1

      In a small pot mix the So Good Soy Regular with the agar-agar powder and raw sugar. Bring to a boil then pour into a heat-friendly container.
    2. Step 2

      Let chill for 1-2 hours to set.
    3. Step 3

      Place the pandan and water in a blender and blend until smooth.
    4. Step 4

      Strain with a cheesecloth then transfer to a small pot and bring to a boil, mix in the raw sugar, and agar-agar powder and mix well.
    5. Step 5

      Pour over the soy jelly and chill for 1-2 hours to set.
    6. Step 6

      Top with fresh grated young coconut.
