- 1 tbs olive oil
- 2 cloves garlic, crushed
- 2 shallots, chopped
- 2 cups mushroom, sliced
- ¼ tsp chilli flakes (optional)
- 4 courgettes, grated
- 200g reduced fat feta, crumbled
- 1 lemon, juiced
- 500g spaghetti, cooked

Step 1
Heat oil in frying pan and saute garlic, shallots, mushrooms and chilli flakes for 5 minutes. Add courgette and cook a further 2 minutes.Step 2
Fold through feta and lemon juice.Step 3
Gently toss through hot spaghetti and serve with lemon wedges.
Tips
- To make this pasta gluten free, simply replace the spaghetti with gluten free spaghetti.
