Mex fest vegan taco

    Ingredients

    • 1 can black beans
    • 1 vine ripened tomato, chopped
    • 1 tbsp olive oil
    • 1/2 red onion chopped
    • 1 clove garlic finely chopped 1/2 red capsicum chopped
    • 1 tbsp Mexican spice mix (see below)
    • 1/2 cup grated vegan The Alternative Dairy Co. cheddar cheese
    • 1 cup coriander leaves
    • 1 lime
    • 8 hard taco shells
    Mexican spice mix
    • 2 tsps ground cumin
    • 1/4 tsp chilli powder
    • 1/4 tsp salt
    • 1/4 tsp black pepper
    • 1 tsp paprika
    • 1/2 tsp garlic powder

    Method

    1. Step 1

      Heat olive oil in a small frypan on medium. Add onion, garlic and spice mix. Fry for 5 minutes.
    2. Step 2

      Add beans and fry for a further 5 minutes.
    3. Step 3

      Heat hard taco shells according to the directions on pack.
    4. Step 4

      To serve, add the bean mix to the taco shell, then add coriander, tomato, onion and finish with cheese.
    5. Step 5

      Squeeze fresh lime and serve straight away
