- 600g kumara, coarsely grated
- 250g courgette coarsely grated & squeezed of moisture
- 2 shallots, finely sliced
- 3 eggs, lightly beaten
- 3/4 cup So Good Almond milk
- 2 tablespoons oil

Sift flour spices and salt into a bowl.Step 2
Add kumara, courgette and shallots.Step 3
Combine eggs and almond milk together in a jug.Step 4
Pour liquid ingredients into dry ingredients and mix gently until well combined.Step 5
Heat oil in a large frypan and spoonStep 6
Cook until golden on both sides. Makes 12 fritters
