Easter Baskets

    Ingredients

    • 1 ripe banana (mashed)
    • 1 teaspoon vanilla extract
    • 1 cup Sanitarium™ Cluster Crisp Macadamia & Salted Caramel Flavour
    • 1/2 cup rolled oats
    • 2 tablespoons chia seedsa pinch of salt
    • 1/2 cup of plain unsweetened yoghurt

    Toppings (optional)Fresh or frozen fruit of your choice, a sprinkle of Cluster CrispMacadamia & Salted Caramel Flavour, dark chocolate chips ormini chocolate egg 

    Method

    1. Step 1

      Set the oven to 180 °C.
    2. Step 2

      In a bowl, mash the banana and vanilla extract until smooth.
    3. Step 3

      Stir in the Cluster Crisp Macadamia & Salted Caramel, oats, chiaseeds, and salt until well combined. Use your spoon to lightly crush the cereal while you stir.
    4. Step 4

      Grease your muffin cups (silicone muffin pans work best for this) anddivide the mixture into each cup.
    5. Step 5

      Press the mixture to form baskets using a spoon or the bottom of asmall glass.
    6. Step 6

      Bake for 8-10 minutes or until the baskets are golden in colour.
    7. Step 7

      Remove from the oven and reshape the baskets while they are stillwarm using a teaspoon or small cup, then allow them to cool in themuffin pan for 10 minutes.
    8. Step 8

      Carefully remove the baskets from the pan and allow them to coolcompletely.
    9. Step 9

      Add a tablespoon of yoghurt plus the toppings of your choice to thebaskets.

    Tips

    Store the unfilled "baskets" in an airtight container for up to 3 days.Once filled, they should be eaten straight away.
