Crispy Popcorn Cauliflower Bites

    Golden, crunchy, and packed with flavour! These Crispy Popcorn Cauliflower Bites are a smoky, spicy snack or side dish that’s perfect for sharing. Coated in a delicious Weet-Bix crumb, they’re a plant-based crowd-pleaser you’ll make again and again!

    Ingredients

    • 1 small cauliflower or ½ large cauliflower
    • ½ cup wholemeal flour
    • ½ cup white flour
    • 1 cup So Good Almond Milk, Unsweetened + extra
    • 6 Weet-Bix, crushed
    • 1 tbsp smoked paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ½ tsp cayenne pepper (optional)
    • salt and pepper, to taste

    Method

    1. Step 1

      Preheat your oven to 190°C and line a large baking tray with baking paper.
    2. Step 2

      Cut the cauliflower into bite size florets.
    3. Step 3

      Mix together the flours and almond milk in a large bowl to form a thick batter. Add more almond milk if needed to get the right consistency for a batter.
    4. Step 4

      Add the cauliflower florets and mix well to make sure each piece is evenly coated.
    5. Step 5

      In another bowl, mix together the crushed Weet-Bix, smoked paprika, garlic powder, onion powder, cayenne pepper and season generously with salt and pepper.
    6. Step 6

      Dip each piece of battered cauliflower into the crushed Weet-Bix mixture to coat and place on the lined baking tray.
    7. Step 7

      Bake for 45-50 minutes, flipping halfway through or until golden brown and cooked through.
    8. Step 8

      Serve immediately with your favourite dipping sauce or make it a meal and serve alongside rice and your favourite veggies.
