Creamy coconut rice

    A simple yet satisfying dessert which is great for warming up on those cool winter evenings.

    Ingredients

    • ½ cup short grain or arborio rice
    • 1L Almond Coconut Milk Unsweetened
    • 2 tbs agave nectar
    • 1 tsp vanilla

    Method

    1. Step 1

      Place rice, Almond Coconut Milk, agave nectar and vanilla in a heavy based saucepan.
    2. Step 2

      Bring mixture to the boil over medium heat, then reduce heat and simmer until mixture has thickened.
    3. Step 3

      Serve with fruit of choice and toasted coconut flakes.

    Tips

    • Nutritional analysis does not include toppings and garnishes.
    • Agave nectar can be substituted with sugar if desired.
