Big Breakfast Burrito

Serves: 4

    Ingredients

    • 4 medium sized Spinach and Herb Wraps
    • 5 Eggs
    • ½ cup of So Good Regular Soy Milk
    • 1 Avocado
    • ½ Tomato
    • 1/3 Red Onion
    • 4 Hash browns
    • Vegie Delights Chorizo Vegie Sausages, amount of your choice

    Method

      Cook the hash browns as per instructions on the pack.
    3. Step 3

      Whisk 5 eggs in a bowl and add So Good Regular Soy Milk. Pour into a pan and scramble. Once cooked, place in a bowl to cool down.

      Dice tomato and red onion and mix with the mashed avocado.

      Individually lay each wrap on a large plate and spread ¼ of the avocado mix, add one hash brown and ¼ of the scrambled egg followed by ¼ of the

      When rolling the breakfast burrito, ensure all filling is in a line down the centre. Fold the sides inwards, over the filling. Roll the burrito tucking, as you roll. Continue rolling until your burrito is seam side down.
    7. Step 7

      Place in the oven for 2-3 min at 200c to warm, then safely insert a toothpick and enjoy.
