Weet-Bix Cinnamon Waffles

    Weet-Bix Cinnamon Waffles are an excellent way to warm up your mornings, combining So Good and Weet-Bix for a more nutritious start to your day.

    Ingredients

    • 4 Weet-Bix™, crushed
    • 1 1/4 cup wholemeal flour (163 g)
    • 3 tsp baking powder
    • 1/4 tsp bi-carb soda
    • 2 tsp cinnamon
    • 1 3/4 cups So Good™ Almond Milk Unsweetened, or So Good™ Soy Lite Milk
    • 2 eggs, whisked
    • 2 tsp maple syrup
    • 2 Tbsp olive oil

    For Topping

    • 2 cups berries + 1 Tbsp maple syrup
    • 4 Tbsp low fat yoghurt

    Method

    1. Step 1

      Combine fruit and syrup for the topping, and set aside to macerate.
    2. Step 2

      Place Weet-Bix, flour, baking powder, bi-carb soda, and cinnamon in a large bowl. Whisk to combine, and make a well in the centre.
    3. Step 3

      Add So Good milk, eggs, syrup, and oil to the dry ingredients. Whisk well, then set aside for 5 minutes to thicken.
    4. Step 4

      Scoop portions of batter into your waffle iron and cook until golden.
    5. Step 5

      Serve with fruit and yoghurt.

    Tips

    Replace berries with diced fresh fruit of your choice.
