Leah Itsines’s so good breakfast muffins

    These Breakfast muffins give you everything you need to start your day right! Filled with goodness from veggies, rice flour and So Good Almond milk Unsweetened, they are a deliciously healthy adition to your morning cuppa. Not only are these muffins great for breakfast but also as a snack through the day. Great served warm or cold!

    Ingredients

    • ½ cup So Good Almond milk Unsweetened
    • 2 eggs
    • ½ cup rice flour 
    • ½ brown onion, diced
    • ½ capsicum, diced 
    • 1 carrot, grated
    • 3 mushrooms, sliced
    • 1 cup baby spinach leaves
    • ½ cup grated cheese 
    • 1 tsp baking powder 
    • Salt and pepper to taste

    Method

    1. Step 1

      Pre-heat oven to 180 degrees (fan-forced). 
    2. Step 2

      Combine all ingredients in a bowl and mix. 
    3. Step 3

      Pour the mixture into a prepared muffin tray. 
    4. Step 4

      Bake in the oven for 20 minutes on 180 or   until lightly browned.
