- 2 tsp olive oil
- 2 limes, juice only
- ½ tsp salt
- 2 tsp brown sugar
- 2 tsp soy sauce, salt-reduced
- ¼ tsp chilli flakes, optional
- ½ cup unsalted peanuts, roughly chopped
- half of a medium green papaya peeled and grated (250g)
- 1 carrot, peeled and grated
- 1 small red onion, finely diced
- ½ cup mint leaves, torn
- ½ cup basil leaves, torn

Step 1
Place sliced red onion in a bowl of cold water (this helps to reduce the pungent flavour and strong aftertaste). Set aside while you prepare the dressing.Step 2
In a bowl combine oil, lime juice, salt, brown sugar, soy sauce and chilli flakes. Drain onions and add to bowl with dressing.Step 3
Reserve a few fresh herbs and peanuts for garnish. Add grated papaya and carrot, remaining herbs and peanuts to the dressing, stir well to coatStep 4
To serve, place salad on a plate, top with remaining mint, basil and nuts.
Tips
- Green papaya can be found at most Asian grocery stores and some green grocers. You can also substitute green mango when in season.
