Finely chopped quinoa salad

    Ingredients

    • 1 cup cooked quinoa
    • 1 finely chopped cucumber
    • 1 finely chopped red capsicum
    • 1 cup halved cherry tomatoes
    • 1/4 cup sliced Kalamata olives
    • 100g crumbled feta cheese
    • 2 tbsp extra virgin olive oil
    • 1 tbsp lemon juice
    • 1/2 tsp dried oregano

    Optional garnish:

    • Chopped fresh parsley

    Method

    1. Step 1

      In a large bowl, combine quinoa, cucumber, red capsicum, cherry tomatoes, Kalamata olives, and feta cheese.
    2. Step 2

      In a small bowl, whisk together extra virgin olive oil, lemon juice, and dried oregano.
    3. Step 3

      Drizzle the dressing over the salad and toss gently to coat all the ingredients.
    4. Step 4

      Serve the quinoa salad immediately, garnished with chopped fresh parsley, if desired.
