Cacciatore Pasta with Vegie Sausages

    Ingredients

    • 1 tbs olive oil
    • 1 onion, chopped
    • 2 cloves of garlic, crushed
    • 1 Vegie Delights™ Vegie Sausages, sliced
    • 1 red capsicum, chopped
    • 250g cherry tomatoes, halved
    • 1 400g tin no added salt chopped tomatoes
    • 2 tbs drained capers
    • 100g pitted Kalamata olives
    • 1 tsp dried mixed herbs
    • 300-400g cooked wholemeal pasta
    • Fresh basil leaves, chopped, to serve

    Method

    1. Step 1

      Heat the olive oil in a large pan and sauté the onion and garlic for a few minutes until softened. 
    2. Step 2

      Add the vegie sausage slices, capsicum and cherry tomatoes and fry for a few minutes so that the vegie sausage slices are browned slightly.  
    3. Step 3

      Add the tinned tomatoes, capers, olives and dried herbs and simmer for 15 - 20 minutes, so that the sauce reduces and starts to thicken together.
    4. Step 4

      Pour in the pasta to heat through and top with fresh basil to serve.
