Courgette and feta pasta

This pasta dish has a delicious combination of courgette, mushrooms and feta, with a dash of lemon, and it’s packed with nutrients and taste.

Ingredients

  • 1 tbs olive oil
  • 2 cloves garlic, crushed
  • 2 shallots, chopped
  • 2 cups mushroom, sliced
  • ¼ tsp chilli flakes (optional)
  • 4 courgettes, grated
  • 200g reduced fat feta, crumbled
  • 1 lemon, juiced
  • 500g spaghetti, cooked

Method

  1. Step 1

    Heat oil in frying pan and saute garlic, shallots, mushrooms and chilli flakes for 5 minutes. Add courgette and cook a further 2 minutes. 
  2. Step 2

    Fold through feta and lemon juice.
  3. Step 3

    Gently toss through hot spaghetti and serve with lemon wedges.

Tips

  • To make this pasta gluten free, simply replace the spaghetti with gluten free spaghetti.
