Ingredients
- 1 pack Vegie Delights Savoury Mince
- 1 tbsp olive oil
- 1 pack (500g) wholemeal pasta
- 1/2 teaspoon black pepper
- 1 cup veggies of choice
- Optional garnish: fresh basil
- 2 cups (400g) pumpkin puree
- 1/4 cup nutritional yeast
- 3 cloves garlic
- 3/4 cup (180ml) pasta water (or reduced salt vegetable stock)
- 2 tbsp olive oil
- 1/2 tsp sea salt, to taste
- 1/2 tsp black pepper
Method
Step 1
Heat the olive oil in a pan over medium high heat and cook the mince until golden brown. Set aside.Step 2
Cook pasta in well salted water according to package instructions. Make sure to reserve the water when you drain the pasta.Step 3
Sauce: Blend all of the ingredients into a blender on high speed until smooth. Taste and season further if needed.Step 4
To serve, add the sauce, veggies and pasta to the pan with the mince and stir to coat. Serve hot, and top with fresh basil leaves.
