Vegan Cheesy Pumpkin Pasta

Serves: 4

Ingredients

  • 1 pack Vegie Delights Savoury Mince 
  • 1 tbsp olive oil 
  • 1 pack (500g) wholemeal pasta  
  • 1/2 teaspoon black pepper 
  • 1 cup veggies of choice 
  • Optional garnish: fresh basil 
Cheesy Pumpkin Sauce
  • 2 cups (400g) pumpkin puree ​
  • 1/4 cup nutritional yeast 
  • 3 cloves garlic 
  • 3/4 cup (180ml) pasta water (or reduced salt vegetable stock) 
  • 2 tbsp olive oil 
  • 1/2 tsp sea salt, to taste 
  • 1/2 tsp black pepper 

Method

  1. Step 1

    Heat the olive oil in a pan over medium high heat and cook the mince until golden brown. Set aside. 
  2. Step 2

    Cook pasta in well salted water according to package instructions. Make sure to reserve the water when you drain the pasta. 
  3. Step 3

    Sauce: Blend all of the ingredients into a blender on high speed until smooth. Taste and season further if needed. 
  4. Step 4

    To serve, add the sauce, veggies and pasta to the pan with the mince and stir to coat. Serve hot, and top with fresh basil leaves.
