Ingredients
- 1 cup self- raising wholemeal flour
- 1/4 cup raw caster sugar
- 1 small red apple, diced
- 1/3 cup peanut butter, no added sugar or salt
- 50g of margarine, melted
- 2 x 60g eggs
- 1/3 cup low fat natural Greek style yoghurt
- 1 tsp vanilla extract
- pinch ground cinnamon
Method
Step 1
Preheat oven to 190ºC fan forced. Place (90ml) muffin cups on a flat tray.Step 2
Combine the flour, sugar and apple in a large mixing bowl.Step 3
Add the peanut butter, melted butter, eggs, yoghurt, vanilla and cinnamon.Step 4
Combine together without over mixing.Step 5
Fill the muffin cups
