Ingredients
- 2 tbsp BBQ sauce
- 2 tbsp reduced salt soy sauce
- 1 tbsp vegetable oil
- 1 tbsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 400g firm tofu
- 1 cup pineapple chunks
- 1 green capsicum (in chunks)
- 4 spring onions, cut into 2cm sections
Optional garnish:
- Coriander
Method
Step 1
Preheat the grill or barbecue to medium-high heat.Step 2
In a bowl, combine BBQ sauce, reduced salt soy sauce, vegetable oil, smoked paprika, garlic powder, onion powder, and black pepper. Mix well.Step 3
Cut firm tofu into cubes. Thread onto a skewer with pineapple chunks, chunks of capsicum, and spring onions.Step 4
Brush the BBQ sauce mixture onto the skewered tofu, pineapple, capsicum and spring onions, coating them evenly.Step 5
Grill the skewers for about 4–5 minutes on each side until the tofu is charred and the vegetables are tender.Step 6
Remove from heat and serve with a garnish of coriander and your choice of sides or salad.
