Ricies™ Easter Eggs

Ingredients

  • 2 cups Sanitarium™ Ricies™
  • 3/4 cup smooth peanut butter (or nut butter of choice)
  • 3 tablespoons maple syrup
  • 2 tablespoons cocoa powder + 2 tablespoons of water
  • 2 tablespoons hemp seeds (optional)

To decorate:

  • dark chocolate chips (1/2 teaspoon per egg)
  • slivered almonds (1/2 teaspoon per egg)
  • freeze-dried strawberries (3 per egg)

Method

  1. Step 1

    To a large mixing bowl, add Sanitarium™ Ricies™ and set aside.
  2. Step 2

    Heat the peanut butter and maple syrup on the stovetop or in àmicrowave-safe bowl until warm. Stir well.
  3. Step 3

    Mix the cocoa powder with water, add it to the peanut buttermixture, and add the hemp seeds.
  4. Step 4

    Pour the peanut butter mixture over the Ricies™, and stir well untilcombined.
  5. Step 5

    Line a tray or chopping board with parchment paper.
  6. Step 6

    Place your cookie cutter onto the board, and transfer the Ricies™mixture into the cookie cutter. Using the spoon, flatten it out andcompress it into the cookie cutter. Repeat until all the mixture isused and you have Ricies™-shaped Easter Eggs.
  7. Step 7

    Freeze for 30 minutes or until firm, then decorate.

Tips

  • Use an 8 x8-inch pan lined with parchment paper if you would prefer to slice the Rices into squares.
  • Store in the freezer in an airtight container for up to 2 months
