Pasta salad

A great way to help your kids get excited about healthy eating.

Ingredients

  • 250g farfalle pasta (bow shape)
  • 1 small courgette, grated
  • 1 small carrot, peeled and grated
  • 310g can corn kernels, drained and rinsed
  • ½ cup low-fat mayonnaise

Method

  1. Step 1

    Bring large saucepan of water to boil, add pasta, boil for 8 minutes or until cooked. Drain, place in large mixing bowl.
  2. Step 2

    Add courgette, carrot, corn and mayonnaise, mix to combine.
  3. Step 3

    Pack in small plastic containers, accompany with fork.
