Oven toasted granola

Making your own granola allows you to control what goes in it by adding what ever makes you happy. Breakfast power bowls made with granola are a delicious start to any day.

Ingredients

  • ½ cup dates
  • 1 cup water
  • 3 tbsp honey
  • 4 cups rolled oats
  • ½ cup pecans, roughly chopped
  • ½ cup macadamia nuts, roughly chopped
  • ½ cup pumpkin seeds
  • ½ cup coconut flakes
  • ½ cup grapeseed oil
  • ½ cup dried cranberries

Method

  1. Step 1

    Place dates and water in a small saucepan and bring to boil. Reduce heat and simmer until soft.
  2. Step 2

    Place date mixture and honey into blender and blend until smooth.
  3. Step 3

    Place date mixture and remaining ingredients, except cranberries, into a bowl and mix well.
  4. Step 4

    Spread mixture onto a baking tray and bake in a moderate oven, 180°C, for 30 minutes, stirring every 5 minutes or until golden.
  5. Step 5

    Remove from oven and leave to completely cool.
  6. Step 6

    Stir through cranberries.
  7. Step 7

    When cold store in an airtight container. Makes 24 x 1/4 cup serves

Tips

  • Any combination of nuts or dried fruit can be used in this recipe. Granola must be completely cold before sealing in a container otherwise it will lose its crispness.
