Ingredients
- 1 can black beans
- 1 vine ripened tomato, chopped
- 1 tbsp olive oil
- 1/2 red onion chopped
- 1 clove garlic finely chopped 1/2 red capsicum chopped
- 1 tbsp Mexican spice mix (see below)
- 1/2 cup grated vegan The Alternative Dairy Co. cheddar cheese
- 1 cup coriander leaves
- 1 lime
- 8 hard taco shells
- 2 tsps ground cumin
- 1/4 tsp chilli powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
Method
Step 1
Heat olive oil in a small frypan on medium. Add onion, garlic and spice mix. Fry for 5 minutes.Step 2
Add beans and fry for a further 5 minutes.Step 3
Heat hard taco shells according to the directions on pack.Step 4
To serve, add the bean mix to the taco shell, then add coriander, tomato, onion and finish with cheese.Step 5
Squeeze fresh lime and serve straight away
