Kumara and courgette fritters

A quick, healthy meal, kumara and courgette fritters are easy to make and great for the whole family!

Ingredients

  • 1 cup self-raising flour
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 600g kumara, coarsely grated
  • 250g courgette coarsely grated & squeezed of moisture
  • 2 shallots, finely sliced
  • 3 eggs, lightly beaten
  • 3/4 cup So Good Almond milk
  • 2 tablespoons oil

Method

  1. Step 1

    Sift flour spices and salt into a bowl.
  2. Step 2

    Add kumara, courgette and shallots.
  3. Step 3

    Combine eggs and almond milk together in a jug.
  4. Step 4

    Pour liquid ingredients into dry ingredients and mix gently until well combined.
  5. Step 5

    Heat oil in a large frypan and spoon
  6. Step 6

    Cook until golden on both sides. Makes 12 fritters
