Italian lentil hotpot

Ingredients

  • 1 tbs oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1/2 tsp dried italian herbs
  • 1 cup sliced mushrooms
  • 690g bottle passata sauce
  • 2 x 425g can brown lentils, rinsed and drained
  • 375g packet commercial gnocchi
  • 1/2 cup grated cheese

Method

  1. Step 1

    Heat oil in a large pot and saute onion and carrot until just soft.
  2. Step 2

    Add italian herbs and mushrooms and saute for 1 min.
  3. Step 3

    Stir through passata sauce and lentils. Bring mixture to boil then reduce heat and simmer for 10 mins until sauce is slightly thickened.
  4. Step 4

    Bring large pot of water to boil and add gnocchi. When gnocchi comes to surface of water remove and drain.
  5. Step 5

    Place lentil sauce in a casserole dish and top with gnocchi. Sprinkle with cheese.
  6. Step 6

    Place under griller and grill until cheese is melted.

Tips

  • Replace gnocchi with mashed potato or sweet potato for a more traditional option.
