Ingredients
- 1 cup cooked quinoa
- 1 finely chopped cucumber
- 1 finely chopped red capsicum
- 1 cup halved cherry tomatoes
- 1/4 cup sliced Kalamata olives
- 100g crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
Optional garnish:
- Chopped fresh parsley
Method
Step 1
In a large bowl, combine quinoa, cucumber, red capsicum, cherry tomatoes, Kalamata olives, and feta cheese.Step 2
In a small bowl, whisk together extra virgin olive oil, lemon juice, and dried oregano.Step 3
Drizzle the dressing over the salad and toss gently to coat all the ingredients.Step 4
Serve the quinoa salad immediately, garnished with chopped fresh parsley, if desired.
