Chocolate beetroot squares

This recipe is a gluten free brownie. The addition of almond meal and grated beetroot makes it moist and tender.

Ingredients

  • 1 1/4 cups almond meal
  • 1/4 cup cacao
  • 1/2 teaspoon baking powder
  • 2 eggs, lightly beaten
  • 1/3 cup honey
  • 2 tablespoons olive oil
  • 3/4 cup grated beetroot

Method

  1. Step 1

    Place almond meal, cacao and baking powder into a large bowl.
  2. Step 2

    Combine remaining ingredient and fold liquid ingredients into dry ingredients. Mix well.
  3. Step 3

    Pour mixture into a greased and line 15cm x 25cm loaf tin.
  4. Step 4

    Bake in a moderate oven, 180°C, for 30 minutes.
  5. Step 5

    Cuts into 12 squares
