Chicken style nuggets

Ingredients

  • 1 pack Vegie Delights Schnitzel
  • 500g sweet potato, sliced on the round into chips
  • 150g potatoes, sliced on the round into chips
  • 150g parsnips, sliced on the round into chips
  • 3 tablespoons extra virgin olive oil or coconut oil

Method

  1. Step 1

    Preheat oven to 180⁰c and line a baking tray with greaseproof paper. Place

    While schnitzel is cooking, bring a medium saucepan with steamer basket to the boil, add sweet potato chunks and cook for 5-6 minutes, remove from basket, cover and set aside, then add asparagus and broccoli and cook for 2-3 minutes.
  3. Step 3

    Whilst vegetables and schnitzels are cooking, in a small bowl whisk together all ingredients for the dressing.
  4. Step 4

    Once schnitzels are cooked, slice, then divide veggies and schnitzel pieces between two bowls. Drizzle with dressing, season with sea salt and black pepper and serve.
