Carrot dukkah

This Middle Eastern inspired dish magically combines pureed carrot with So Good™ almond milk, pickled carrot and almond dukkah.

Ingredients

Carrot puree

  • 4 carrots, peeled
  • 2 tbs miso paste
  • 125ml So Good™ almond milk

Pickled carrot

  • 1 carrot
  • 1 cup rice wine vinegar
  • 2 tbs honey
  • 1 tsp salt

Dukkah

  • 1/2 cup sliced almonds
  • 1 tbs cumin seeds
  • 1 tbs coriander seeds
  • 2 tbs sesame seeds
  • 1 tsp chilli flakes
