White bean, vegie sausage and spinach stew

The whole family will enjoy this hearty winter warmer with Vegie Delights™ Vegie Sausages. It's a good source of iron and protein too!

Ingredients

  • 1 pack Vegie Delights™ Vegie Sausages, cut into 1 cm pieces
  • 1 tbs olive oil
  • 1 small brown onion, diced
  • 500g frozen spinach
  • 4 cloves garlic, crushed
  • 3 cups reduced salt vegetable stock
  • 400g tin no added salt chopped tomatoes
  • 400g tin cannellini beans, rinsed and drained
  • Black pepper
  • To serve: Toasted wholemeal sourdough bread, fresh parsley leaves and chilli flakes

  1. Step 1

    Pre-heat a large soup pot to medium-high heat. Add olive oil and

    Add the onion and stir until softened slightly.
  3. Step 3

    Add the spinach, garlic and vegetable stock and cook, stirring occasionally for approx. 5 minutes to soften the garlic.
  4. Step 4

    Add the tomatoes and beans to the pot. Stir to combine and season with black pepper to taste.
  5. Step 5

    Bring the soup to a boil then reduce the heat to medium-low and simmer 10 minutes.
  6. Step 6

    Serve with bread, parsley and chilli flakes if desired.
