Ingredients
- 4 Weet-Bix™, crushed
- 1 1/4 cup wholemeal flour (163 g)
- 3 tsp baking powder
- 1/4 tsp bi-carb soda
- 2 tsp cinnamon
- 1 3/4 cups So Good™ Almond Milk Unsweetened, or So Good™ Soy Lite Milk
- 2 eggs, whisked
- 2 tsp maple syrup
- 2 Tbsp olive oil
For Topping
- 2 cups berries + 1 Tbsp maple syrup
- 4 Tbsp low fat yoghurt
Method
Step 1
Combine fruit and syrup for the topping, and set aside to macerate.Step 2
Place Weet-Bix, flour, baking powder, bi-carb soda, and cinnamon in a large bowl. Whisk to combine, and make a well in the centre.Step 3
Add So Good milk, eggs, syrup, and oil to the dry ingredients. Whisk well, then set aside for 5 minutes to thicken.Step 4
Scoop portions of batter into your waffle iron and cook until golden.Step 5
Serve with fruit and yoghurt.
