Pink lady coconut cream

Delicious and simple cream that even allows those who are dairy free to enjoy the delights of whipped cream.

Ingredients

  • 425g can pink lady apples in natural juice
  • ½ cup brazil nuts
  • ½ tsp vanilla essence
  • ½ cup lite coconut cream

Method

  1. Step 1

    Place all ingredients into a blender and blend till smooth.
  2. Step 2

    Store in refrigerator in a glass jar. Makes 22 tablespoons.

Tips

  • This nut cream is an awesome dairy free substitute for cream or yoghurt. Can be used over muesli, fruit or as a dip.
  • Use sparingly as coconut is a significant source of saturated fat.
