Peanut butter chocolate squares

This easy to make treat is dairy and gluten free and makes an excellent Easter special occasion food.

Ingredients

  • 1/2 cup cacao butter, melted
  • 3/4 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup cacao
  • 1/2 cup raw buckwheat
  • 1/2 cup dried cranberries
  • 1/4 teaspoon salt

Method

  1. Step 1

    Place cacao butter in a glass bowl and place over simmering water in saucepan. Heat until just melted.
  2. Step 2

    Combine all ingredients in a large bowl, but reserve 1 tablespoon each of buckwheat and cranberries.
  3. Step 3

    Pour into a lightly greased 19cm x 29cm lamington slice tin. Sprinkle with reserved buckwheat and cranberries.
  4. Step 4

    Place into refrigerator to set. Cut into bite size pieces. Makes 40.

Tips

  • Cacao butter is an edible vegetable fat from the cocoa bean. It can be sourced from health food shops. It is high in saturated fat so needs to be used sparingly, hence the small serves.
  • Buckwheat is often mistaken as a grain but it is actually a seed of a plant. It is gluten free and can be eaten raw or cooked.
