Peaches & Cream Overnight Weet-Bix™

Prep: 5 (refrigerate overnight)

Creamy yoghurt, sweet peaches, and a crunchy topping make for a special breakfast treat!

Ingredients

  • 2 Weet-Bix™, roughly crushed
  • 1/3 cup So Good™ Almond Milk Unsweetened
  • 150 g low fat Greek yoghurt
  • 1/2 cup sliced fresh peach, or tinned peaches in juice, divided
  • 2 tsp toasted nuts or seeds
  • 1-2 tsp juice from canned peaches or honey to serve (optional)

Method

  1. Step 1

    Mash or dice half the peach slices. In a small container or bowl, combine Weet-Bix™, almond milk, and diced peaches, to form the base.
  2. Step 2

    Spread yoghurt on top of the base.
  3. Step 3

    Top with remaining peaches, and sprinkle with toasted nuts and seeds.
  4. Step 4

    Place in the fridge for 2 - 3 hrs, or overnight.

Tips

If desired, stir 1 - 2 tsp of juice from canned peaches or honey
