Ingredients
- Olive oil
- 4 minced garlic cloves
- 2 400g cans black beans
- 1 Cup salt-reduced vegetable stock
- 2 Cups chopped spinach
- 1/4 Cup grated parmesan
- Juice of half a lemon
Garnish:
- Fresh basil
- Lemon zest
Method
Step 1
Heat olive oil in a pan. Sauté garlic cloves.Step 2
Add black beans, salt-reduced vegetable stock, chopped spinach. Cook for 5 minutes.Step 3
Stir in grated Parmesan and lemon juice. Cook for 1 minute.Step 4
Serve as a side or over wholegrain pasta. Garnish with fresh basil and lemon zest.
