Parmesan and spinach black beans

Ingredients

  • Olive oil
  • 4 minced garlic cloves
  • 2 400g cans black beans
  • 1 Cup salt-reduced vegetable stock
  • 2 Cups chopped spinach
  • 1/4 Cup grated parmesan
  • Juice of half a lemon

Garnish:

  • Fresh basil
  • Lemon zest

Method

  1. Step 1

    Heat olive oil in a pan. Sauté garlic cloves.
  2. Step 2

    Add black beans, salt-reduced vegetable stock, chopped spinach. Cook for 5 minutes.
  3. Step 3

    Stir in grated Parmesan and lemon juice. Cook for 1 minute.
  4. Step 4

    Serve as a side or over wholegrain pasta. Garnish with fresh basil and lemon zest.
