Lemon and herb vegie roast tray bake

Why not try a plant-based twist on the traditional Christmas centerpiece with this Vegie Delights™ Vegie Roast tray bake. Seasoned with zesty lemon and garden herbs, and stacked with nutritious and filling veggies, it's a fresh, summery take on a family classic.

Ingredients

  • 3 tbs olive oil
  • 6 cloves garlic minced
  • Zest and juice of 1 lemon
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp paprika
  • 1 Vegie Delights™ Vegie Roast
  • 2 medium parsnips, peeled and cut into batons
  • 200g Brussels sprouts, trimmed and halved
  • 2 tbs flat leaf parsley, chopped
  • 2 tbs fresh dill chopped
  • 1 tbs chives, chopped

Method

  1. Step 1

    Preheat the oven to 180°C.
  2. Step 2

    In a small bowl mix together the oil, garlic, spices and lemon zest and half of the juice.
  3. Step 3

    Lay the vegetables and the roast evenly in a medium baking tray.
  4. Step 4

    Pour the seasoning mix over the vegetables and roast and toss to coat well.
  5. Step 5

    Bake in the oven for 25-30 minutes. After 15 minutes stir and rotate pan.
  6. Step 6

    Bake until the vegetables have softened and are golden on the outside.
  7. Step 7

    Once cooked, pour over the remaining lemon juice and top with the fresh herbs.
  8. Step 8

    Slice the Vegie Roast before serving.
