Date and nut slice

High in fibre and bursting with flavour, this simple slice is perfect for sharing over a hot drink with family and friends.

Ingredients

  • 2 eggs
  • ¼ cup caster sugar
  • ½ tsp vanilla
  • ½ tsp cinnamon
  • ¾ cup plain wholemeal flour
  • ¾ tsp baking powder
  • 2 cups dates, finely chopped
  • 2 cups pecans, finely chopped

Method

  1. Step 1

    Place eggs in a bowl and beat with an electric mixer until light and fluffy.
  2. Step 2

    Add sugar and vanilla and beat well.
  3. Step 3

    Add sifted cinnamon, flour and baking powder as well as dates and pecans. Stir well.
  4. Step 4

    Spread mixture into a lightly greased and lined 26cm x 16cm lamingtion tin. Bake in a slow oven, 150°C for 30 minutes.

Tips

  • Cut slice and store in an airtight container for 3-5 days.
  • To make a tasty gluten free treat, simply subsitute the plain wholemeal flour with gluten free plain flour.
