Ingredients
- 1 tbs olive oil
- 1 pack Vegie Delights™ Smokey BBQ Burgers
- 4 wholemeal bread rolls
- 4 slices reduced-fat cheddar cheese of choice
- 1 small sweet gherkin, sliced
- 2 medium tomatoes, sliced
- 2 cups rocket
- 1 tbs American style mustard
- 1 tbs chipotle aioli
Sweet Potato Wedges:
- 2 large sweet potatoes, thickly sliced into wedges
- 1 tbs olive oil
Method
Step 1
Preheat oven to 220C. For the sweet potato wedges, toss cut up sweet potato in olive oil and then spread evenly onto a baking tray lined with baking paper. Bake until cooked through and browned, 30 minutes.Step 2
Preheat frypan or BBQ plate to medium heat. Add oil and cook burgers 10-12 minutes, turning halfway. Remove from heat.Step 3
Top base of bread roll with rocket, tomato slices, gherkin and a burger patty. Finish with a cheese slice and sauces and a few more rocket leaves. Serve with sweet potato wedges and enjoy’.
