Acai chia puddings

These Acai chia puddings are filled with good flavours, omega 3's and fibre. They are super easy and simple to make ready in just 5 mins and is a great meal option for when you're on the run. Whether its breakfast, a snack or a dessert these vegan puddings have got you covered. Made using So Good Almond Milk Unsweetened, they make a great gluten free dairy free option that the whole family will love.

Ingredients

  • 1/2 cup chia seeds
  • 1/2 tsp maple syrup
  • 2 tsp acai powder*
  • 1 tsp vanilla essence
  • 2 cups So Good™ Almond Milk Unsweetened
  • 1/2 cup coconut yoghurt
  • 1/4 cup berries

Method

  1. Step 1

    Combine chia seeds, maple syrup, acai powder, vanilla essence and almond milk in a bowl. Stir until well combined. Refrigerate overnight.
  2. Step 2

    Divide half the chia pudding mixture between two jars. Add layers of yoghurt, berries and remaining chia pudding. Top with fresh berries and coconut flakes.

Tips

  • *Acai powder can be found in some supermarkets and health food stores but is not an essential ingredient and can be omitted from the recipe.
