Bolognaise sauce

This awesome meat-free meal, using canned items and pantry staples, will quickly become a firm family favourite. This sauce is so versatile and is proper comfort food, full of fibre and protein. Serve over pasta, oven baked potatoes, in a vegetarian shepherds pie or simply over toast.

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, diced
  • 2 garlic cloves, crushed
  • 1 1/2 teaspoons curry powder 
  • 400g can diced tomatoes 
  • 400g can brown lentils, rinsed and drained 

Method

  1. Step 1

    Heat oil in a saucepan. Add onion and sauté until translucent. Add garlic and curry powder, sauté for 1 minute.
  2. Step 2

    Add tomatoes and lentils. Bring to boil, reduce heat and simmer for 5 minutes or until the sauce has thickened. 

Tips

  • Top with chopped black olives for an easy twist to the flavour.
  • Serving suggestions: Mix through wholemeal pasta, top on baked potatoes or sweet potato, place over wholegrain toast, use as a filling for a vegetarian shepherd’s pie.
