BBQ Roasted Vegies

Ingredients

  • 1 pack Vegie Delights™ Thick BBQ Sausages
  • 2 Tbs of olive oil
  • 1 red onion, quartered
  • 2 small zucchinis, sliced
  • 5 finger eggplants, sliced
  • 200g of Swiss brown mushrooms
  • 1 red and 1 yellow capsicum, cubed
  • 250g of cherry tomatoes
  • Pepper
  • Fresh basil leaves or pesto to garnish

Method

  1. Step 1

    Heat a medium frypan or BBQ grill to medium. Cook Vegie Delights™ Thick BBQ Sausages 6-7 minutes, turning frequently. Remove from pan and keep warm.
  2. Step 2

    Add oil and vegetables to pan, and season with black pepper. Cook for 5-6 minutes until golden and cooked through.
  3. Step 3

    Garnish sausages and vegetables with fresh basil leaves or pesto. Serve.
