Baked Berry Oatmeal

Ingredients

  • 2 cups rolled oats
  • 3/4 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 2 eggs, beaten
  • 1 3/4 cups lactose free milk
  • 1/4 cup maple syrup
  • Lactose-free yoghurt, for serving (optional)

Method

  1. Step 1

    Combine oats, walnuts, spices, baking powder and berries in a large bowl and stir to combine.
  2. Step 2

    In a separate bowl, combine milk, maple syrup, vanilla and eggs and whisk well.
  3. Step 3

    Grease a 20cm baking dish. Spread the oat mixture evenly in the baking dish. Pour over milk mixture and use a spoon to wiggle the oats so the milk moves down.
  4. Step 4

    Bake at 180°C for 40 minutes until golden.
  5. Step 5

    Serve with yogurt, if using.
